Change things up with this simple and tasty side dish. Tomato couscous has a warmth and slight tomatoey sweetness that makes it the perfect complement to just about any dish.
- 4 tbsps unsalted butter
- 3 cups pearl couscous
- 2 tbsps dried minced onion
- 3 1/2 cups unsalted chicken stock
- 2 tsps sugar
- 1 1/4 tsps kosher salt or to taste
- 1 tsp ground black pepper
- 1 tsp garlic powder
- 1/4 tsp paprika
- 1 can tomato paste 6 oz can
