for the Pasta

  • 1 lb penne pasta
  • 2 cloves garlic minced
  • 1 small white onion diced
  • 4 cups unsalted chicken stock
  • 1 tsp kosher salt or to taste

for the Creamy Tomato Sauce

  • 1 jar sun-dried tomatoes 8.5 oz packed in olive oil, drained, reserve 2 tablespoons of the olive oil
  • 1 cup whole milk room temperature
  • 1 cup heavy whipping cream room temperature
  • 1 cup parmesan finely grated
  • ½ cup fresh basil leaves packed
  • ¼ cup sour cream
  • 1 tsp kosher salt or to taste
  • tsp pepper or to taste

to add as Garnish

  • parmesan grated
  • fresh basil chopped
